Ingredients:  
Ingredients:  
1 c. milk
c. water
tsp. dried oregano
tsp. each salt & pepper
1 c. quinoa, rinsed
Grated zest of one lemon
2 Tbsp. lemon juice
2 tomatoes chopped
1 sweet pepper (any colour), chopped
English cucumber, chopped
c. red onion, diced
1 c. canned red kidney beans, drained & rinsed
1 c. feta cheese, crumbled

Directions:
Directions:
1. In deep saucepan, combine milk, water, oregano, salt & pepper. Bring to boil over medium heat.
2. Stir in quinoa. Reduce heat to low, cover & simmer for 20 minutes. Let stand covered 5 minutes.
3. Transfer to bowl. Stir in lemon zest with fork. Let cool.
4. Stir in remaining ingredients. Serve or refrigerate up to one day.
