1 c. hot milk
1 c. quick cooking rolled oats
1 c. chopped dates
1 c. raisins
2 eggs, lightly beaten
c. canned pumpkin puree
1 tsp. vanilla
1 c. whole wheat flour
1 c. all purpose flour
c. packed brown sugar (I usually cut this in )
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
tsp. nutmeg
1 c. walnuts or pecans, chopped

1. Preheat oven to 350F.
2. Heat milk on stove in medium-sized pan (or in microwave). When heated, remove from heat and add oats, dates and raisins.
3. In a separate bowl, beat together eggs, pumpkin and vanilla and set aside.
4. In large bowl, combine whole wheat and all purpose flours, sugar, baking powder, salt, cinnamon and nutmeg.
5. Add oat mixture and pumpkin mixture to large bowl, stirring with fork until completely moistened. Stir in nuts.
6. Spoon into 12 large muffin tins (that are well greased not with paper liners as they stick), filling almost level with tops.
7. Bake for 20 to 25 minutes.
