1-1 1/2 pound tender beef (tenderloin or rib eye)
2 T olive oil
2 small mild red chilies, seeded and sliced
3 1/2 C small mushrooms (baby portabellas or shitake)

Dressing
3 green onions, thinly sliced
2 finely chopped garlic cloves
Juice of 1 lime
1-2 tsp. Thai fish sauce
2 T cilantro, chopped

Salad
Salad greens (romaine, bib lettuce or fresh spring greens, whatever you like)
Cucumbers, thinly sliced
Cherry tomatoes
Sesame seeds

Preheat grill until hot, then cook steak 2-4 minutes on each side depending on how done you like it. Let stand and firm up for at least 15 minutes. Slice meat as thinly as possible and place in bowl. Heat the olive oil, add chilies and mushrooms, cook 5 minutes. Turn off the heat and add the steak slices stirring to coat the meat. Stir all the ingredients for the dressing together then pour over the meat mixture and toss gently. Serve on the bed of fresh greens, cherry tomatoes and cucumbers. Sprinkle with sesame seeds. Serve.
