4 tbsp. Oil
2 Eggs – beaten
4 c. Cold cooked rice
½ tsp. salt
2 tbsp. Soy sauce
1 c. Cooked beef, pork, chicken, OR shrimp (or a combo of them) – diced small
2 Scallions- chopped fine

Directions:
Directions:
1. Heat 2 tbsp. of the oil in wok (or fry pan). Scramble eggs. Remove and set aside.
2. Heat 2 tbsp. oil in wok or large fry pan). Stir- fry rice breaking up lumps by pressing rice against the pan and turning quickly and constantly stirring.
3. Add salt, soy sauce, beef (or whatever meat you want), scallions, and scrambled eggs. Stir- fry to heat thoroughly.
