1 cups large flake oatmeal (may grind in coffee grinder or food processor)
1 cups whole wheat flour
2 tsp. baking soda
1 tsp. baking powder
tsp. salt
1 tsp. cinnamon
3 Tbsp. chopped walnuts
1 cups buttermilk (or soured milk)
1 cup milk
c. applesauce
2 eggs
1 tsp. vanilla
c. sugar
c. raisins

1. In a large bowl, combine oats, whole wheat flour, baking soda, baking powder, salt, cinnamon & nuts.
2. In another bowl, combine buttermilk, milk, applesauce, eggs, vanilla and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes. Stir in raisins.
3. Lightly oil a skillet or griddle and preheat it to medium heat. Ladle 1/3 cup of the batter onto the hot skillet. Cook the pancakes for 2 to 4 minutes per side or until brown.
4. If the batter is thin, use a spatula to help lifter to flip them over.
