¾ c. Oil
2 Eggs
2 c. Sugar
2 ½ c. Flour
1 tsp. Baking powder
1 tsp. Salt
1 tsp. Cinnamon
1 tsp. Soda
1 tsp. Vanilla
3 c. Chopped Apples (I make tiny cubes)
½ c. Chopped Nuts (walnuts or pecans)

Directions:
Directions:
Beat first 3 ingredients together. In another bowl mix,. Flour. Baking powder, Salt, Cinnamon,. Soda --Mix into first ingredients (will be thick) & add:. Vanilla
Then add: Chopped Apples and Chopped Nuts

Bake 350º for 1- 1 ¼ hrs. Does not need icing.
