6 c sliced peaches
2 Tbsp honey
1 1/2 Tbsp minced candied ginger
2 Tbsp cornstarch
1 c unbleached flour
1/4 c rolled oats
1/3 c packed light brown sugar
4 Tbsp light margarine, cubed and chilled
3 Tbsp chopped pecans, toasted
frozen fat-free vanilla yogurt

Preheat oven to 350. In a large bowl, toss peaches and honey. Sprinkle with ginger and cornstarch. Set aside. In a medium bowl, combine flour, oats, and brown sugar. Using a pastry blender or fork, cut in margarine. Add pecans and toss lightly with 2 forks to combine. Spoon peaches into a 2 qt baking dish. Sprinkle oat mixture on top. Bake until golden and hot, about 45 minutes. Allow to cool for 30 minutes before serving. Top with a dollop of yogurt.
