1 tbsp. shortening
2 tbsp. plus 2 1/2 cups flour, divided
1 cup sugar
1 cup packed brown sugar
1 cup canola oil
1 cup buttermilk
3 eggs
1 tbsp. vanilla extract
1 1/2 tsp. almond extract
1 1/2 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. baking soda
1 cup chopped pecans
powdered sugar

Directions:

Grease a 10-inch fluted pan with shortening, lightly coat with 2 tablespoons of flour; set aside. In a large bowl, beat the sugars, oil, buttermilk, eggs and extracts until well-blended. Combine the remaining flour, baking powder, salt, cinnamon, cloves and baking soda; gradually beat into the sugar mixture until blended. Stir in pecans. Transfer to prepared pan. Bake in a preheated 325º oven for 50 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire racks to cool completely. Dust with powdered sugar.

This traditional Greek spiced cake recipe was passed on to me by my friend Maria. Almost every Greek family has their own version of this cake. Luckily, when her family moved to Chicago years ago, they brought this great recipe along with them!
