Cooked, mashed yellow squash
2 T. butter
1/4 t. pepper
1/4 t. salt
1 egg
1/2 C. chopped onion
4 small crackers
1/2 C. grated cheddar cheese

Directions:
Directions:
Mix everything together except the cheese and crackers.

Top the squash mixture with cheese, then crumble crackers over the top.

Bake at 350º for 25 minutes.

Love this! And even my kids would eat this veggie dish and enjoy it!

I've used Swiss or Mozzarella cheese instead of Cheddar - Swiss is probably my favorite.
