1 lb. semisweet chocolate (preferably 58% cacao), finely chopped
2 c heavy cream
2 T unsalted butter, softened

Directions:
Put chopped chocolate in medium bowl. Bring cream to boil in 2-quart saucepan over medium-high heat. Pour hot cream directly over chocolate. Let it sit without stirring for 5 minutes. Using whisk, stir in center of mixture in small, tight circular motion until fully combined. Add butter and stir until it is fully incorporated. Put piece of plastic wrap directly onto surface of ganache and set aside at room temperature for at least 8 hours or overnight.
