Icebox Oatmeal Cookies Recipe

1 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. soda
3 c. oatmeal
1/2 c. nuts (optional)

Directions:
Directions:
Cream shortening and sugar. Add eggs and vanilla. Beat well. Add dry ingredients and blend well. Add oatmeal and nuts. Divide into two, 2" rolls (looks like a rolling pin or log). Wrap completely in wax paper and chill thoroughly or overnight. Slice 1/4" thick and bake on an ungreased cookie sheet for about 10 minutes at 350º. Make sure not to over bake!

Mom used to make these cookies and keep the dough in the freezer to bake later. Learned to love cookie dough by sneaking it out of the freezer when I was little!
