Banana Pudding From Scratch Recipe

3/4 cup Sugar
1/3 cups flour
1/8 teaspoon salt
2 eggs, well beaten
2 cups evaporated milk
2 tbsp. butter
1/2 tsp. vanilla
Nabisco Vanilla Wafers
3-4 bananas

Directions:
Preheat oven 425°
Combine butter, sugar, salt, flour, and eggs in double boiler. Slowly add milk, stirring constantly. Cook over hot water until thick and smooth. Add Vanilla. You can do without a double boiler, but you really have to watch so doesn't scorch.

Use 1 1/2 quart casserole dish, pour one-fourth of the pudding, cover with a layer of vanilla wafers and sliced bananas. Alternate between pudding, wafers and bananas until all gone.
Top last layer with Meringue:
Make meringue by beating 2 egg whites to soft peaks, add 1/4 cup sugar and beat to stiff peaks. Spoon meringue over pudding, spread completely over pudding to seal edges (if needed, increase recipe to cover top), this will keep it from shrinking back from edges as it browns in oven, causing gaps over the pudding.
Bake until meringue is light brown, about 5 minutes.
Serve warm or cold. Refrigerate leftovers

This is as close to my mom's recipe as I could get. You can do the jello instant vanilla pudding (2 boxes) if you don't want to do the pudding from scratch.
