6 single chicken breasts, cooked and cubed or shredded
1 1/2 lbs. broccoli florets, cut into pieces
2 cans cream of chicken soup
1 cup mayonnaise
2 tbsp. lemon juice
1 tsp. curry
1 cup sharp cheddar cheese, grated
1 cup bread crumbs
1 tbsp. melted butter

Cook chicken breasts in water, drain, let cool. Partially cook broccoli in water, do not overcook, drain, let cool. Heat chicken soup, mayonnaise, lemon juice and curry in a saucepan. Butter a 9x12x2-inch baking dish. Arrange a layer of shredded or cubed chicken, then top with a layer of broccoli. Pour soup mixture over broccoli, then top with shredded cheddar cheese. Combine bread crumbs with melted butter in a pan and lightly brown. Sprinkle bread crumbs on top of cheese. Bake in a preheated 350º oven for 40 minutes.

This is one of my favorite dinners. When I went to Panera Bread, I would always order the broccoli cheddar cheese soup. I liked the taste so much that I always asked my mom to make this. Whenever it was my Aunt Ellen's birthday, Grandma always made if for her too. You may need a little extra cooking time if the ingredients are cold.
