Ingredients: 6 TB butter, softened 4 1/2 - 4 3/4 powdered sugar 1/4 c. heavy cream (or milk) 1 1/2 tsp. vanilla

Directions:Beat butter in mixing bowl until light and fluffy. Gradually add half the powdered sugar, beating well. Beat in the milk and vanilla. Gradually beat in the remaining powdered sugar, then add additional milk, if necessary, to make frosting of spreading consistency. Add food coloring if desired. (Makes enough to frost the top and sides of two 8-9 inch layer cake.) Spread on graham crackers and enjoy!
Variations: Chocolate: Prepare as above except add 2 oz. unsweetened chocolate, melted and cooled with vanilla. OR increase butter to 1/2 c., add 1/4 c. cocoa powder and mix. Orange or Lemon: Prepare as above except add 1 tsp. orange peel or 1/2 tsp. lemon peel. Use orange juice or lemon juice instead of milk. Can also use lemon or orange extract in place of the vanilla. Peanut Butter: Prepare butter frosting, but use peanut butter in place of the butter and add additional milk, if necessary. |

Notes: In the summer Mom always took us to various parks around the valley and she often packed a picnic lunch. She would read in the shade, and we'd play on the playground. Graham cracker cookies were a frequent dessert on these outings.
