1 c. Sugar
½ c. Butter, softened
¼ tsp. Cinnamon
¼ tsp. Ground Cloves
1 tsp. Cider Vinegar
1 tsp. Vanilla
4 Eggs, separated
1 c. Pecans, chopped
1 c. Raisins

Directions:

Preheat oven to 325 degrees F

Prepare 8 or 9 inch unbaked pastry shell or pie crust.

In a large bowl, cream sugar and butter at medium speed until light and fluffy. Add cinnamon, cloves, vinegar, vanilla and egg yolks; mix until well blended. Stir in the pecans and raisins. In a small bowl, beat whites until stiff peaks form. Fold egg whites into the pecan raisin mixture. Spoon into pie crust lined pan. Bake at 325 degrees for 35 to 45 minutes or until top is evenly golden brown and center is set. Cool and serve with whipped cream if desired.
