1 1/2 lb. ground beef
1 small onion, chopped
2 cloves garlic, chopped
1 16 oz. can enchilada sauce
1 c. whole kernal corn
1 can (2 1/2 oz) sliced ripe olives, drained
1 tsp. salt

for corn meal mixture:
2 1/4 c. corn meal
2 c. water
1 12 oz. can evaporated milk
1 tsp salt
1 can diced green chilis

Directions:

Heat oven to 350º. Use 9x13 casserole dish.

Mix the corn meal mixture. Pour 1/2 of mixture into casserole dish.

In 2 T butter, stir fry the onion and garlic until translucent. Drain and set aside.
Brown the ground beef , drain and add the onion and garlic, enchilada sauce, corn, olives, and salt. Mix the filling together. Pour on top the corn meal mixture.

Top with the remaining corn meal mixture.

Bake for 50-60 minutes.
