2lb. boneless skinless chicken breasts
1 tsp garlic salt
Black pepper to taste
2 tbsp. olive oil
1 onion, thinly sliced
1 can diced tomatoes
1/2 cup balsamic vinegar
1 tsp dried basil
1 tsp dried oregano
1 tsp dried rosemary
1/2 tsp dried thyme

Season both sides of the chicken with garlic salt and pepper.
Heat olive oil in a skillet over medium heat. Cook chicken breasts until chicken is browned, 3-4 minutes per side. Add onion, cook and stir until onion is well browned, 3-4 minutes.
Pour diced tomatoes and balsamic over chicken and onions. Add in remaining seasonings. Simmer until chicken is cooked through, about 10-15 minutes.
