1 3/4 C all-purpose flour
1 1/2 C sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
2 ripe bananas, mashed (1 cup)
1/2 C vegetable or canola oil
1/4 C plus 1 Tbsp buttermilk or (1/4 C milk and 1 tsp vinegar)
1 tsp vanilla extract
1 C chopped nuts (optional)

In a large bowl, stir together flour, sugar, baking soda and salt. In another mixing bowl, combine eggs, bananas, oil, buttermilk and vanilla; add flour mixture, stirring just until combined. Fold in nuts. Pour into a greased 9x5x3 inch baking pan. Bake at 325º for 1 hour and 20 minutes or until bread tests done. Cool on wire rack. Recipe states that it does not double well. I have done so many times and haven't had any trouble.

This is another favorite recipe that we have shared as gifts for many, many years. One year we made 20 full-sized loaves to share with our Argentine friends. We have even baked the loaves in a stone oven!
