"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 cup butter, softened
2 1/4 cup brown sugar, packed
1 dash salt
1 cup light corn syrup
1 can (14 oz.) sweetened condensed milk (fat free or regular)
1 tsp. vanilla

Directions:
Directions:
Grease a small cookie sheet or a 9X13 cake pan and set aside. Melt butter in a sauce pan over medium heat. Add brown sugar and salt. Mix well. Stir in corn syrup. Gradually add sweetened condensed milk, stirring constantly. Cook until candy mixture reaches firm-ball stage (~245F) approx. 12-15 minutes. Test by dropping hot liquid into a cup of ice. Candy should instantly harden to chewy caramel consistency. If not, continue cooking and testing until desired consistency is achieved. Remove from heat and stir in vanilla. Pour caramel into pan. Allow to cool before cutting and wrapping in waxed paper squares.

Personal Notes:
I found this caramel recipe in a HyVee recipe book a few years ago after Aaron and I got married.
