Ingredients:  
• 2 medium brown or white onions, peeled and sliced
• 1 large box organic baby spinach, washed and ready to use
• 1-2 Tablespoons olive oil
• 1 block extra firm non-GMO enriched tofu, sliced in about 8 slices
• (slice & cover tofu with paper towel till ready to use to absorb some of the moisture)
• 1 bottle peanut sauce

Directions:
Directions:
1. Sauté sliced onions in olive oil till caramelized. Spread in the bottom of a small rectangle cake pan.
2. Sauté/steam the spinach adding a little at a time till all is just barely wilted and still green. Spread on top of the onions.
3. Wash the frying pan. Heat more olive oil. Pat the tofu dry with more paper towel. Fry till golden brown on both sides. Place browned slices on top of spinach.
4. Pour peanut sauce over top.
5. If making ahead, cover with aluminum foil and refrigerate. Heat individual portions in microwave when ready to eat OR cover with aluminum foil and heat in a medium oven till warm.
