2 qt mussels
8 oz dry white wine
3 Tbsp olive oil
1 small onion, sliced thinly
4 cloves garlic, pressed ( or 1 tsp garlic powder)
4 celery sticks including tops, chopped coarsely
1/2 tsp parsley, chopped finely

Directions:
Directions:
Scrub mussels and remove threads. Heat olive oil in a heavy pan with cover. Add onion, pressed garlic and chopped celery. Saute until onion is transparent. Add mussels, pour wine over all and cover tightly. Cook over medium high heat for 3-4 minutes. Shake pot briskly to mix. Turn off heat and allow to stand 2 minutes. Open cover and sprinkle with parsley. Mussels will have opened. Serve with broth from the mussels in one cup and drawn melted butter, if desired, in another cup.
