4 cups tomato sauce (Betsy's red sauce would be good!)
1 small onion, chopped
1 tbsp. olive oil
1 pound ground round or sausage
4 cups cooked rigatoni (about 2 1/2 cups uncooked pasta)
2 cups shredded mozzarella cheese, divided
Cooking spray
1/4 cup grated parmesan cheese

Directions:

1. Preheat oven to 350
2. Coat large nonstick skillet with olive oil.
3. Brown onion and beef over medium high heat until browned, stir to crumble. Drain well.
4. Combine meat mixture, cooked rigatoni, tomato sauce and 1.5 cups mozzarella in a 11x7 inch baking dish covered with cooking spray.
5. Top with 1/2 cup mozzarella and parmesan.
6. Bake at 350 degrees for 20 minutes or until thoroughly heated.
