9-inch pie shell, unbaked
10 oz. pkg. frozen chopped spinach
6 eggs
3 oz. cream cheese, softened
1/2 cup shredded cheddar cheese
2 tbsp. green onion, sliced
1 tbsp. parsley
1/2 tsp. salt
dash pepper
2 tbsp. grated Parmesan cheese

Directions:
Directions:
Cook spinach according to package directions; drain well. Beat eggs, cream cheese and shredded cheese. Stir in spinach, green onion, parsley, salt and pepper. Turn into 9-inch pie shell; top with Parmesan cheese. Bake in a preheated 350º oven for 20 minutes or until firm. Let stand 10 minutes before serving.

This spinach quiche is a bit heavier than most since it uses an entire package of spinach. It freezes well if you want to make it in advance. It also makes great leftovers.
