1 lb. orzo pasta
3 tbsp. fresh lemon juice
1/4 cup extra virgin olive oil
1/2 cup pine nuts, toasted
6 oz. feta, crumbled
1 cup thinly sliced scallion greens

Directions:
Directions:
1. Cook orzo in a pot of boiling salted water until tender, drain well in a colander.
2. Toast pine nuts in a shallow baking pan in a 350 degree oven until golden, 5 or so minutes.
3. Whisk together lemon juice, olive oil, salt and pepper to taste in a large bowl.
4. Add hot orzo and toss.
5. Cool orzo, then toss with pine nuts, feta, and scallion greens.
6. Season with salt and pepper and serve, or refrigerate for later.
