1 tablespoon Mint
1 tablespoon parsley
1 tablespoon basil
5 garlic cloves cut in large chunks (Do not mince or the garlic will burn)
light olive oil
One handful of pine nuts
Lemon zest
1 cup Tomato sauce
1/2 cup Chicken stock
1 cup Reconstituted raisins (soaked in hot water)
1 or 2 - 6 to 8 ounce tuna steaks
Black pepper
Kosher salt
Fresh chopped parsley

To make the sauce:

In a large heavy sauce pan add your light oil and throw in your large chunks of garlic and the pinenuts. Sauté for 2 to 3 minutes. Next to add your seasonings, you're mint, parsley and basil. Add your lemon zest, tomato sauce, raisins and chicken stock and simmer for 10 to 15 minutes.

For the tuna steaks simply brush them with oil and cover them liberally with black pepper. Sauté them in a heavy hot skillet on all sides very quickly.

When plating the dish I simply ladle out the sauce and place the tuna on top. Garnish with fresh parsley.

If you don't like pepper and the strong flavors that come with it you can omit the pepper and just season your tuna lightly with your favorite seasonings. Salt, pepper, garlic powder, onion powder etc.
