Eggs 4
Vegetable Oil 1 cup
Sugar 2 cups
Carrots 1 pound
Flour 2 cups
Baking Powder 1 Tablespoon
Baking Soda 1 teaspoon
Salt 1 teaspoon
Cinnamon 2 teaspoons

Frosting

Cream Cheese 4 ounces
Butter 2 Tablespoons
Powdered Sugar 1/2 - 3/4 box
Salt Dash
Milk 1 Tablespoon (approx.)
Vanilla 1 teaspoon
Nuts (for topping)

1. Preheat oven to 400 degrees
2. Blend eggs, oil, sugar in food processor. Slowly add carrots one at a time. When carrots are fully ground, turn off processor and remove lid.
3. Add flour, baking powder, baking soda, salt and cinnamon. Replace the lid and blend until through mixed.
4. Pour batter into a greased and floured 10” tub pan and bake about 1 hour. Let stand in pan 5-8 minutes to cool before removing from pan.

Frosting
Mix all frosting ingredients and when cake is completely cooled, frost. Sprinkle with nuts.
