"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Beat eggs, water and salt until foamy. Add 2 c. flour and beat well. add additional flour until it pulls off the side of the bowl. (A kitchenaid mixer was used to mix up the church's noodles.) Dump out and knead slightly. Do not worry if it is a little sticky. You can always add more flour. Cover with a towel and let set at least 20 minutes. Divide into 2-3 balls and roll out as thin as desired using plenty of flour to keep it from sticking. Cut into strips and allow to air dry or use immediately. Freeze noodles to be used later. Yields: approx. 1 1/2 lb. noodles
