1 cup rice
1 Tablespoon oil
1 large can stewed tomatoes
1 small onion, chopped
½ teaspoon minced garlic
1 small can diced green chilies OR
1 jalapeño pepper, minced
1 small can sliced black olives
2 cup water
1 ½ teaspoons vegetable bullion

Directions:
Directions:
1. Brown rice in oil.
2. Add tomatoes, onion, garlic, peppers, olives; cook 2-3 minutes.
3. Add water and bullion; cover; cook on low for 20 minutes before checking.
4. Then stir and continue cooking until moisture is absorbed.
