1. Sauté in 2-3 Tablespoons of oil:

1 medium onion, chopped
2 cloves garlic, minced

2. Add:

2 cans (16 ounces each), tomatoes (Del Monte Chunky Stewed)
2 cans kidney beans (undrained)
2 teaspoons beef flavored bullion
2 teaspoon chili powder
½ teaspoon cumin
¾ teaspoon sea salt
1 bay leaf
1 teaspoon honey
1 pound tofu (cut in squares)
1 can diced mild Ortega chilies

Bring to a boil, reduce heat and simmer covered for at least one hour.
