2 breasts of chicken, cooked and diced
2 Tablespoons soy sauce
1 cup uncooked long-grain rice
1/3 cup salad oil
2½ cups chicken broth
½ cup chopped onion
1 stalk celery, chopped
4 slightly beaten eggs
1 cup finely shredded lettuce or cabbage

Directions:

1. Combine chicken and soy sauce. Let stand 15 minutes.
2. Brown rice in oil over medium heat. Add chicken mixture and broth.
3. Simmer, covered 20-25 minutes.
4. Stir in onion and celery.
5. Cook uncovered until all liquid is absorbed.
6. Push rice mixture to the side of pan.
7. Add eggs to clear side of pan and cook until almost set.
8. Blend into rice.
9. Stir in cabbage.
10. Serve at once with soy sauce.
