1 lb ground beef
1/2 onion chopped
1-2 peppers chopped (optional)
1 small can chilies (optional)
1 can beans - chilli beans, kidney beans (your choice)
1 pkg taco seasoning
10 flour tortillas
2 c shredded cheddar

For Sauce:
1 qt tomatoes (I use whole tomatoes, but you can use what you have)
1 pkg taco seasoning

serve with sour cream and cilantro (optional)

Directions:
Directions:
Begin with Sauce.
Pour tomatoes in a saucepan and simmer, stirring occasionally, breaking up tomatoes, until reduced by approximately 1/3.
Add taco seasoning (which will thicken the sauce)
Simmer a bit, then remove from heat.

Brown ground beef, drain and return to pan.
Add chopped onions and peppers and saute until fragrant.
Add beans and taco seasoning, stir and simmer.
Remove from heat.

Begin assembling the enchiladas by spooning some sauce on the bottom of the baking pan to prevent sticking.
Place heaping spoonful of ground beef mixture into each flour tortilla, roll up and place into baking dish.
Spoon sauce over enchiladas, sprinkle cheese over all
Bake at 350 degrees for 30 - 40 minutes until bubbly in the center of the pan.
Top with sour cream and chopped cilantro

I often add a can of corn to the beef mixture. You can also opt to add a can of chilies to the sauce, depending on your preference for spice level - or split the contents between the beef mixture and the sauce.
