Dressing:
1 cup olive oil
1 shake red pepper (optional)
1 tsp. sugar
dash Tabasco sauce (optional)
2 or 3 garlic cloves, mashed
5 or 6 anchovies, cut up (optional)

head of romaine lettuce
salt
pepper
1 lemon, juiced
1/3 cup grated Parmesan cheese
croutons

Directions:
Directions:
Dressing: Mix all the ingredients together; let sit. Dry lettuce on paper towels; tear into pieces and dust with salt and pepper. Add lemon juice to the oil mixture. Toss dressing with salad and sprinkle with Parmesan cheese. Toss again and top with croutons.

The romaine lettuce may be prepared ahead of time by soaking the thoroughly washed leaves in ice water for 15 to 20 minutes. Pat dry; store lettuce in a large plastic bag and tie it securely. Keep the lettuce chilling in the refrigerator, so it will be extremely crisp for the salad.
