2 chicken breasts or 2 drumstick-thighs (2 cups cooked meat)
8 squares wonton dough, cut into 1/8-inch strips
2 oz. rice noodles
1/4 head of lettuce, shredded to make a lettuce bed on serving platter
1/4 head of lettuce, shredded, add to salad
4 stalks green onion
sesame seeds or toasted almonds (optional)

Dressing:
4 tbsp. sugar
2 tsp. salt
6 tbsp. vinegar or rice vinegar
1/2 tsp. black pepper
6 tbsp. salad oil
2 tbsp. sesame oil

Put chicken in pot and cover with water. Bring to a boil and simmer for 20 minutes. Remove chicken; drain on paper towels. Heat 2 inches of oil in a pan. When hot, drop in rice noodles a little at a time, and they will "explode" into large puffs. Take out at once; drain on paper towels. Cut wonton dough into 1/8-inch strips and fry until crispy. Take out; drain on paper towels. Fry chicken meat for 5 minutes. Remove; drain on paper towels. Let cool; then skin, debone and tear the meat into strips. Put chicken meat into a large bowl. Dressing: Combine all the ingredients; mix well. Pour dressing over meat; mix well. Slide sharp knife down green onions, shredding into ribbons, then cut into 1/2-inch lengths. Add the green onions; mix again. Next add the fried wontons, noodles and lettuce; toss. Use the shredded lettuce to make a bed on a serving platter. Pile the salad over the lettuce bed. Top with sesame seeds or toasted almonds.

After I moved to California, I took a Chinese cooking class form Sophie Chin, and this was one of my favorite recipes. You can prepare the chicken, rice noodles, wontons and dressing a day ahead and store them in separate plastic bags. Marinate the cooked chicken in the dressing, so all you have to do is cut the vegetables and toss everything together.
