Crust:
3/4 cup oatmeal
1/3 cup brown sugar
1/2 cup melted butter

Filling:
3 eggs separated
1/4 cup lime juice
2/3 cup sugar
1/4 tsp. salt
1/2 tsp. lime rind
1 tsp. vanilla extract
1 cup whipping cream, whipped
few drops of green food coloring

Directions:
Directions:
Crust: Combine all ingredients in a shallow baking pan. Toast about 10 minutes in a preheated 350º oven. Toss while cooling. Filling: Combine egg yolks, lime juice, sugar and salt in pan. Cook over low heat stirring constantly until mixture boils. Remove from heat. Cool. Stir in lime rind, vanilla and food coloring. Beat egg whites until soft peaks form, not stiff; fold into lime mixture. Fold in whipped cream. Place 1 tablespoon crust in baking cups (paper cup cake or muffin tins). Pour in filling and top with 1 teaspoon crust. Freeze 2 or 3 hours.

This is an old recipe mom use to make for special occasions. It is refreshing, especially after a heavy meal. If you are in a hurry, just press the crust mixture into a pie tin and pour all the filling into the prepared crust. Then sprinkle left-over crust mixture on top.
