1/2 cup blanched corn
4 ripe roma tomatoes, peeled, seeded and diced
1/2 cup onion, minced
1 teaspoon jalapeno peppers, minced
2 tablespoon chopped cilantro
1 tablespoon fresh lime juice
1 teaspoon fresh lemon juice
kosher salt
ground pepper

Directions:

Combine the corn, tomatoes, onions, jalapenos, cilantro, lime and lemon juice. Mix well, season the salsa with salt and pepper, refrigerate for at least 1 hour before serving.
