2 lbs. red potatoes
1/2 cup green onion, stem and tops chopped
1/2 tsp. dry basil
2 tbsp. wine vinegar
1/2 lb. Italian salami
1/2 cup pascal celery, chopped
1 1/2 tsp. salt
1/4 tsp. coarsely ground black pepper
1/4 cup olive oil
1/2 can chopped black olives
anchovies for garnish (optional)
cucumbers for garnish (optional)
tomatoes for garnish (optional)

Directions:

Cook potatoes; cool and dice. In a bowl, combine the rest of the ingredients; mix well. Pour over the potatoes and gently mix. Save a little salami to use for a garnish. It is best to make it the night before and refrigerate. Decorate with anchovies, cucumbers and tomatoes, if desired.
