4 large potatoes, cooked and diced
1 garlic clove, peeled
1 onion, sliced paper thin
1 tbsp. diced pimento
2 anchovy fillets, chopped
1 tbsp. capers
1 tbsp. hot water
1/4 cup olive oil
3/4 tsp. salt
2 tbsp. vinegar
12 stuffed green olives, sliced
salad greens

Directions:
Directions:
Place potatoes in a garlic-rubbed salad bowl with onion, pimento, anchovies and capers. Add hot water; toss lightly. Add oil and salt and toss again; chill. Just before serving, add vinegar and toss lightly. Garnish with greens and sliced olives.
