1 C Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
1 Egg
2/3 C Milk
1 C Corn off the Cob or canned corn drained and patted dry

another version also has 1 tbsp Sugar and 1 tbsp oil

Directions:
Directions:
Heat oil to 375
Sift together dry ingredients. Add egg and milk. Mix thoroughly. Add the corn.
Drop by spoonfuls into hot oil until golden brown. Turn to brown both sides.
Enjoy warm with maple syrup or confectionary sugar.
