2 pounds yellow squash, sliced
1 medium onion, chopped
1/4 cup mayonnaise
1 cup cheddar cheese, grated
1 egg, beaten
salt and pepper to taste
beef bouillon cube, crumbled
1/2 stick butter, melted
1/4 - 1/2 cup crackers, crushed

Directions:
Directions:
Preheat oven to 350º. Boil squash and onions for 10 minutes; drain. Mix in mayonnaise, cheese, egg, salt and pepper. Place in a greased 9x12 casserole dish. Spread crackers and butter on top. Bake uncovered for 30 minutes.
