1/2 lb. Boar's Head London Top Broil Top Round Roast Beef sliced thin and cut into bite size pieces
1 c. Provolone cheese, grated
1 q. beef broth
2 c. crimini mushrooms, sliced
1 medium onion, sliced thin
1 clove garlic, minced
2 tsp. dried parsley
1 T. olive oil
1 T. butter
salt and pepper to taste

Directions:
Directions:
In soup pot, heat the olive oil over medium high heat. Add the onions and cook until they begin to caramelize. Add the garlic, mushrooms, parsley, and butter. Cook until mushrooms begin to soften. Add the beef and the broth and bring to a low boil. Salt and pepper to taste. Serve topped with grated provolone.
