2 fluid ounces olive oil blend
4 each onion diced
6 cloves garlic minced fine
2 pounds okra sliced 1/2" thick
1 pound yellow squash sliced 1/2" thick
3 cups plum tomato diced
1 tablespoon Cajun seasoning or to taste
2 pounds spinach leaves washed and chopped
to taste salt and pepper
¼ cup brown sugar

Saute onions and garlic in oil until onion is translucent.
Add spinach, squash, okra, tomatoes and seasonings, simmer until tender.
Adjust seasoning.
