3 heads romaine lettuce washed, trimmed, chopped,
dried
For the slaw
½ each red onion sliced thin
½ pound mushrooms washed, sliced
2 cups cabbage shredded
1 each green bell pepper diced
2 ribs celery ribs diced
¼ cup mayonnaise
to taste salt and pepper
For the garnish
6 ounces monterey jack cheese or pepper jack, shredded
18 each cherry tomatoes Cut in ½s
24 ounces grilled chicken breast sliced
6 ounces andouille sausage minced
12 fluid ounces honey mustard salad
dressing

Directions:
Directions:
Roast andouille sausage until crisp, drain and chill.
Combine vegetable slaw ingredients with mayonnaise, adjust seasoning.
Fill 6 containers with equal parts of the lettuce, arrange equal parts of the vegetable slaw
on lettuce, lay chicken slices over vegetable slaw, garnish with roasted sausage, cherry
tomato halves and shredded cheese.
Place 1 souffle cup of dressing in container.
NOTES: Adjust amount of lettuce needed to fill container.
