2 fl. ounces oil
6 cups rice
2 each onions chopped fine
4 each celery ribs chopped fine
2 each carrot chopped fine
¼ teaspoon ground bay leaf
½ teaspoon thyme crumbled
½ teaspoon ground white pepper or to taste
2 ½ quarts chicken broth or vegetable broth
to taste salt

Saute vegetables in oil until they start to soften, do not brown. Add rice and stir until well
mixed.
Add broth and seasonings, bring to simmer, cover and cook approximately 20 minutes.
Serving Ideas: Use vegetable broth for vegetarian option.
