30 ounces catfish fillets 6 portions, 5 oz. Each
2 tablespoons Cajun seasoning or to taste
1 cup flour or as needed
2 each eggs beaten
4 ounces cornmeal
as needed oil to cook fish

Directions:
Directions:
Season filets with Cajun seasoning, dredge in flour, dip in egg, and coat with cornmeal.
Saute filets in oil on both sides until done (145 degrees internal temperature for 15
seconds)
