1 cup ricotta, well drained
2 T olive oil
salt
2 eggs
2-3 cups flour

Sauce:
1 T olive oil
1/4 teaspoon crushed red pepper flakes
2 cloves garlic, minced
1 quart marinara sauce (see marinara sauce recipe)
2 ounces vodka
1/2 cup heavy cream

Directions:
In the bowl of a mixer, combine ricotta, oil and salt. Mix on medium high with wire whisk for about 2 minutes or until smooth. Add the eggs one at a time and mix another minute. On a clean surface, spread out 1/2 cup flour and then turn out ricotta mixture. Add another cup of flour and fold the flour into the mixture. Continue to fold until no longer sticks to your fingers. Try not to overmix. Divide the dough into 6. On a floured surface, press and roll dough balls in to logs about 1/2 thick. Once all the logs are rolled, cut each log into 1 inch pieces. Place on a pan and chill or freeze. If not using right away, when frozen, you can place in a zip loc back for a later time. When you are ready to cook gnocchi, dump into boiling, salted water. When they are ready, they will float to the top. Remove and place in sauce.

Sauce: Add olive oil to a skillet set over medium high heat. Add the garlic and red pepper and saute until garlic just begins to turn color. Add marinara sauce and bring to a simmer. Whisk in the vodka and the cream and bring to a simmer. Add the gnocchi and finish by allowing to simmer two minutes. Garnish with Parmesan cheese.
