1 pound Penne pasta, cooked to package directions
1 T olive oil
2 T butter
2 shallots, diced
4 cloves garlic, minced
1/2 cup white wine
large roasted red pepper, pureed (can use bottled, drain well)
1 pint heavy cream
4 ounces asiago cheese, grated
1/4 Parmesan, grated
zest of 1 lemon
juice of 1 lemon
1-2 cups frozen peas, thawed
fresh chopped Italian parsley
salt and pepper

Directions:
Directions:
Add olive oil and butter to a skillet set over medium heat. When the butter melts, add the shallots and garlic. Saute until shallots are soft. Add the white wine and reduce by half. To the skillet add the cream and red pepper puree. Allow the cream mixture to come to a boil. Whisk in cheeses and whisk until melted. Add the lemon juice and zest. Add pasta. Combine well and serve, garnished with parsley.
