1 tbsp. olive oil
2 leeks, finely minced
1 whole garlic head, minced
1 jalapeño pepper, seeded and minced
6 lbs. 10 oz. can or 4-28 oz. cans peeled Roma tomatoes, pressed through a sieve
1 1/2 tsp. salt
1/2 tsp. ground pepper
10 fresh basil leaves, loosely chopped
crusty or stale Italian bread, cut into very fine slices
olive oil and ground pepper to taste

Directions:
Sauté the leeks, garlic and jalapeño pepper in olive oil; add the tomatoes. Simmer for about 1 hour. Add salt, pepper and basil. When the tomatoes are cooked and the soup isn't too thick, add the crusty bread. Mix with a wooden spoon until you have a mixture with a thick, smooth consistency. Add olive oil and ground pepper to taste. Use fresh basil leaves for garnish.

Brian and I first made this recipe during a private cooking class in Italy at Osteria La Gramola. We arrived at the restaurant in the morning and helped the chef prepare the evening meal. It was an experience we will never forget!
