2 eggs
3 ripe bananas
2/3 cup sugar
1/3 cup oil
1/2 cup chopped nuts
1 3/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda

Directions:
Directions:
In a large mixing bowl, beat eggs until blended. Mash bananas and add to eggs. Add sugar and oil to banana mixture; beat well. Sift flour, baking powder, baking soda and salt together. Stir into banana mixture until just blended. Add nuts and mix. Pour into a greased 5x9-inch loaf pan. Bake in a preheated 350º oven for 55 to 60 minutes. Cool before cutting.

Ellen Macias' Tip: When your bananas start getting brown; peel, store in a zip lock bag and freeze until you have enough time and bananas to make the bread.
