11/2lb.chicken breast
8oz red fish Cajun seasoning
1/2c.grated parmesan
1/2c.heavy cream
2T.garlic chopped (3 cloves)
2T shallots chopped(2 medium size)
3 strips of bacon chopped (preferred apple smoke)
4oz olive oil
2tsp.salt
2tsp.black pepper
2T.fresh parsley chopped

Season chicken breast with 1T.Cajun seasoning.
heat 2oz olive oil in Sautee pan sear both sides of chicken and place them in a 350 oven tell chicken reaches 165.while chicken is cooking place a gallon of water and heat for pasta(season with salt)when water comes to a boil add pasta, stir so pasta wont stick cover and turn off set timer for 15 minutes. In sauce pot add remaining olive oil (2oz) add garlic, shallots and bacon cook for 6-8 min then deglaze with white wine reduce tell wine is halve way. Add alfredo, cream, Parmesan. Let simmer for 10 minutes. sauce should be creamy and smooth add 1/4c.of Cajun seasoning and parsley let simmer for 5 minutes. Drain noodles and slice chicken, set up 4 plates and divide pasta on each plate ladle 6oz sauce on the noodles and add slice chicken.garnish with grated Parmesan and sprigs of parsley.
