Ingredients: 1-1/2 pound shrimp, peeled, deveined and chopped 1 stick butter, 2 tablespoons more for brushing 2 medium onion, chopped 2 small stalk celery, chopped fine 1 red bell pepper, chopped fine 2 tablespoons garlic, minced 1/2 cup parsley, chopped 1/2 cup green onions (scallions), chopped 1 cup mushrooms, chopped 8 ounces white cheddar cheese, grated 1/2 cup heavy cream 1 teaspoon black pepper (or to taste) 1 teaspoon cayenne (or to taste) 1 teaspoon Cajun seasoning Frozen puff pastry, thawed Egg wash (made from 1 egg and water)

Directions:In medium saucepan over medium heat, melt the butter and sauté the onion, bell pepper, and celery for five minutes then add the mushrooms and sauté for two minutes then add the garlic for 30 seconds.
Add the seasonings and the white cheddar and stir until completely melted. Add the shrimp to the mixture. Do not forget to stir to prevent scorching. Add the cream to make a nice sauce. Add the parsley and green onions to the mixture, combining well. Set aside.
Fill ramekins with the filling. "Paint" the rims with the egg wash. Lay out the pastry and cut to cover the top of the ramekin with left over to crimp the sides. Place the dough over the ramekin and crimp the sides. Paint the crust with melted butter and make three slits in the top to vent. Grind pepper and dust with seasoned salt over the crust.
Bake at 350º until the crust is golden brown and the filling is bubbling out of the vents. |
